Pol Sambol — පොල් සම්බෝල is one of Sri Lanka’s much-loved coconut accompaniments.

At its heart is freshly grated coconut, traditionally combined with ingredients including chilli, shallot, lime and salt. It can sit comfortably alongside rice, string hoppers, hoppers and curries.

That’s a good indication of just how versatile it is.
